If you are hungry for dessert, then there are plenty of diabetes recipes available for you to enjoy. One such recipe is that for applesauce loaf cake. The ingredients in this cake include ½ cup of chopped walnuts, 1 ½ cups of applesauce, 1 egg, 1 cup sugar, 2 Tablespoons oil, 1 teaspoon vanilla extract, 2 cups all purpose flour, 2 teaspoons baking soda, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg and 1 cup of raisins. You will need to begin by pre-heating your oven to 350 degrees and greasing 2 loaf pans that are 8x4x2 inches. Next you will want to toast the walnuts in an ungreased skillet pan. To do this you will need to stir them while heating on medium-low heat for between 5 and 7 minutes. Once they are done they will be brown and smell like nuts. You will want to set them aside to cool. While they are cooling you will want to mix the applesauce, egg, sugar, oil and vanilla in a large bowl. In a smaller bowl you will want to mix together the flour, baking soda, cinnamon and nutmeg. You can then pour the flour mixture into the applesauce mixture before stirring in both the raisins and the cooled toasted nuts. Half of the batter should go into each pan before being baked for between 45 and 55 minutes.
